Guessing the 195° will still be within the temp threshold of the ECM, so it will not throw a code...with that said, you are correct on fan settings, the 195° will probably not make any difference in stop and go traffic or crawling...out on the open highway is where we would probably observe the difference, but I tow a lot so it would probably be welcome for my needs...it wouldn't void our warranty either as Mopar is showing a 195° Thermostat in the parts fiche...I took screenshots of that page....
So I get what you are saying. But if on cold weather drives your t-stat opens and you never reach 203, you will throw a code. It is trying to tell you that your t-stat is stuck open. Just clear that code since you know what it is, would be my advice.

Yes, it looks like they hack Tranny Temp Switch to create a "Cool Down" Mode...

Cooldown Mode: Press ▷ + CRUISE CANCEL toturn the engine fans on High. Press again to turn them off.
NOTE: When the engine is off, the fans will turn off automatically if the battery drops to 11V.
NOTE: The transmission temperature will read as 229Fwhile this mode is being used with the engine running.
NOTE: Only works with the engine OFF on manual Jeeps

This is exactly what is needed. To permanently change the settings we used HP tuners software. That requires the newer ECMs (2015+) to be sent away to be “unlocked” to allow this change to be saved.
